- 1 ½ pounds beef tenderloin (sliced into thin strips)
- 4 tablespoons flour (or more as needed)
- 2 tablespoons butter
- 1 medium onion (finely diced, about 1 cup)
- 1/2 pound mushrooms (sliced thinly)
- 1 can (10 oz) beef broth
- 1/2 cup water (or more as needed)
- 1/2 teaspoon salt
- 1 container (8 oz) sour cream
Instructions
- In a bowl, combine 1 ½ pounds of beef tenderloin with 4 tablespoons of flour. If you want a thicker sauce, add 1-2 additional tablespoons of flour.
- In a large skillet, heat 2 tablespoons of butter over medium to high heat. Sear the beef in batches, about 30-60 seconds per side, until golden brown. After searing, place the meat on a plate and cover with aluminum foil to keep warm.
- Add 1 finely chopped onion and 1/2 pound of thinly sliced mushrooms to the hot skillet. Sauté until they are soft, adding more butter if necessary.
- Pour 1 (10 oz) can of beef broth into the skillet and scrape up the browned bits from the bottom. Let the mixture simmer until it thickens into a sauce. Add up to 1/2 cup of water or more broth to reach the desired consistency. Season with 1/2 teaspoon of salt.
- Stir the seared beef back into the sauce and heat everything through. Take a small amount of the hot sauce and stir it into 1 (8 oz) container of sour cream to warm it up. Then quickly stir the mixture back into the skillet, but do not let the sauce boil to avoid curdling the sour cream.
- Serve the Beef Stroganoff immediately with your favorite sides.
